Basic Business 101 - Use a fucking contract. I can't wait to see this go down in court:

Amazing for someone who is always exclaiming how professional he is, still does business like he was in junior high. I know you'll claim you've never needed to use a contract, but thats the whole purpose of using one for the time it does arise.
