Do not alter your old galleries one bit. If you're getting traffic to them, leave them.
UNLESS you simply do not get credit for the sales sent to the tours you're pushing on them. In that case, might as well remove them and redirect to a blank 404 page with no links, no popups, no nothing. Plain simple. In fact, if you ever remove submitted galleries always display said 404 page.
