First of all, the real reason for having multiple interfaces is of course redundancy. Second, you can use these 4 independent NIC's to be on several different networks at the same time, reducing the need for additional hardware for load balancing among multiple networks, plus allowing you to have an expanded network presence.
Plus, if you use trunking to combine the multiple NIC's into a single interface, you can theoretically have a single pipe feeding 4Gbps of throughput for your system if you have a trunking-enabled switch on the other end.
