If any of this is true then you need to start hiring competent people, instead of crack whores. Seriously.
Where are the backups? You say there was a copy on the old server, so ok. What I'm getting is that if this had happened BEFORE the new server went up then you'd have had NO BACKUPS. That makes NO sense to me.
Also you keep talking about hard copies which is giving me a headache.
