I dont see a problem having a rich creamy chablis with crab and then drinking a demi-sec / sec champagne with desert, infact thats what its pretty much what champagne with additional residule sugar is for. As for the two bottles after, they weren't part of the plan, i wanted to get trashed and they were cold and ready to go.
