Ohhhhh I just finished eating... holy hell head that was nice. Here's the sauce:
fry up some diced onions in butter, sprinkle some pepper in there while it's frying up (I love pepper so i use a lot). Slow down the heat and add some more butter (a fair hock, or cock, or whatever they call a piece of butter - got it! KNOB), and a bunch of sliced up mushrooms. Wait till the mushrooms are golden brownish and crush some garlic onto them, and add some cream (35% fat one) - about 250 ml. Then add a little of one of those chicken stock cubes, simmer it and then grate some nice cheese into it. When the cheese is melted, add flower to stiffen it if you need, and then the sauce is ready to cover your steaks.
