From this impartial seat it looks like you should pay the man his money back Aaron. Surely $1250.00 isn't to much for a business of your caliber. In fact I don't believe the $750.00 is justified on your part but I'm a layman.
If it were me I'd be refunding his whole $2000.00 immediately.
