My faves, in categories:
Stealth-strategy game: Splinter Cell Chaos Theory (delightfully addictive, and a great coop mode for you and a buddy to sneak around together)
Speed and badass air game: SSX3 (snowboarding game... can't wait for the next one)
Driving game (I know you don't like them but hey): DTM Race Driver 2 or Forza Motorsport (closest to Gran Turismo you'll get on an xbox)
Flying game: Crimson Skies
Fun big world of crap to do game: Pacman World 2, Toejam & Earl III
Shooter: Halo 2
Squad based combat: Rainbow Six 3
Football: Madden anything
Enjoy! If you got an "old" style Xbox you'll never be the same once you mod it and stick in a huge hard drive.
