I'd use ftp for any site of size to your local hard drive. This could take a long while if you have a ton of galleries and art. Hope for a solid connection to the net. You could also arrange with your host to do this for you to a local machine there or tape or hard-drive or DVD..

As for the MySql DB you could use PHPAdmin

How can I backup my database or table?
Click on a database or table name in the left frame, the properties will be displayed. Then go to the Dump section, you can dump the structure, the data, or both. This will generate standard SQL statements that can be used to recreate your database/table.

You will need to choose "Save as file", so that phpMyAdmin can transmit the resulting dump to your station. Depending on your PHP configuration, you will see options to compress the dump. See also the $cfgExecTimeLimit configuration variable.

For additional help on this subject, look for the word "dump" in this document.

A reinstall means creating the DB and tables. Read the documentation or hire someone to do it. The rest of the site is FTP again and checking your file and directory rights. Plesk likes you to use File Manager as you know. So you may have to fuck with your trading scripts etc. You may find your self doing a program reinstall.

Things are different server to server. Settings that affect the way Plesk operates. Nothing like having a guru to turn too and the bucks set aside should you need him or her.
