IMHO, and I am nice guy, I would give them the raw material.
The biggest reason is for example if your (current) member area has the pictures sized at 800x600 and they want to provide bigger pics for the site on a re-design, the raw materials will come in handy. Also if you currently only offer your video in .mov format, and they want to offer .wmv in a couple of sizes and .mpg, the .avi files are sure nice to have. I would provide upon completion of sale the site in it's current form, then get the raw materials to them as soon as you can if they ask for them.
Again, this is just my opinion, but I have been on both sides of that debate and it works out well for everyone just to go with that flow.
