You are aware if proper frying procedures are followed fried foods will not gain nearly any oil from the frying. Correct temperature is crucial though. The water in the food tries to escape via steam and this pressure pushing outward prevents the oil from saturating inward.

BTW you can fry with olive oil, though it flavors the food where many other oils have no flavor at all. It also has a very low smoke point and really is not recomended for most fry jobs.
