My favorite recurring skit was the Samurai, who always ended up with Buck Henry or Frank Zappa (although there was a memorable encounter the Samurai had with Charles Grodin).
As for an individual skit, Lucy Lawless' impersination of Steve Nicks for Stevie Nicks' Taco Hut... she did a great Stevie, and the writing was perfect, including the rewording of the songs to fit in with running a Tex/Mex place...
