I think another important thing is to make sure you have survival stuff in your car as well. This is especially important if you live up North like I do. You never know when you'll be stranded in a car or need to evacuate an area right away. It is important to carry flashlight, blankets, water bottles, food, and a gallon of gas in the trunk.

Get a copy of Soldier of Fortune Magazine. There are stores that do survivalist stuff like this. Any gun store should have a copy they can sell you. Or they may know where the stores are or URLS or something.
Failing that, a outdoor store can help you out. Tell them you are going for long distance hiking away from civilization. They will get you the MINIMUM stuff you need for two weeks on your back and on foot, wihtout trying to sell you the crap that is "guarenteed to keep you alive".
One thing about the MREs, they are designed for active army types, who are on their feet, humping their packs and about 40 lbs of other geer like grenades, amunition and their rifle. Those things have about 3000 calories in them and it's rumored that there are chemicals in some of the food to deliberately constipate you. They are for high-energy use. So if you anticipate sitting in one place for a long time munching on them, you may want to look at some of the hiker's meals instead of the MREs.
