I lift weights 3 days a week and do cardio exercise 1-2 days a week and I adopted a strict vegan diet. No meat, no dairy, no sugar, caffeine or booze ( about once a month though I cheat a little and have one or more of those things ) I've never suffered hunger pains because I eat a lot, it's just low calorie food, fruits and veggies and stuff and the weight has just dropped off. I can't belive how much better I feel now as compared to a year ago.
I got big right after college when I was sitting in front of a computer 14 hours a day. You nailed it on the head when you say you can eat a lot more of good food than you could possibly want. I was trying to eat 2000 calories a day and had trouble doing it on some days. My diet is somewhat like yours, but I eat a lot of chicken.

It's amazing how much better you feel after a couple weeks.
