Wowsa! I have it but not as bad as some of your chaps.
Yeah, I've read about the surgery. Remove parts of skin in throat, tonsles, and little ball in back, etc, etc. I've heard of the air machines, and all that jazz.
For me, there were a number of things that effected it. First, alcohol. For whatever reason, after a drinking weekend, next 2-3 days would give me the 500 choking, falling dreams. Then they would go away. Next, no longer can sleep on back. So sleep on side with one of those pillows, and wake up in drool every morning. GF drove me nuts with the stop breathing stuff, and would always push me over on side or chest how she likes to sleep. Unless there is alcohol, no problems.
I will still consider surgery. I am 32, and definately do not like when allergines are in the air, humidity, laying on back, and so on when I have to wake up, NOT gag, and restart breathing again. Doesn't happen much anymore, but when it does, still annoying. I notice it more now when humidity is high, or a lot of allergines in air overnight.
I am used to it now, so most of the time I can keep heart rate down, and start breathing, say fuck off, and go back to sleep. When it would happen when I was younger, was a bit harder and would be up for days.
