I see, we're talking about different things.
Those offshore companies aren't one man companies and are setup bulletproof in tax exempt zones, with directors and shareholders which makes it possible for you to stay anonymous and to protect assets. It takes a lawyer to do that and also there are usually requirements you can't usually personally fulfil either to get an associated bank account or just for incorporation.
