SSh into the box and check the logs. It will tell you if the server has been rebooted and when during this month. Then copy and paste the log for your case should this ever get that far. If you have documented all this downtime and correspondence I see no reason to continue paying them. In fact if you paid be credit/debit card you should be initiating a chargeback.
