It's simple really. They want to present themselves to other more submissive lesbians that they are "as good as any man". They go overboard with the "tough bitch" attitude to get noticed more and maintain a large "rugged dyke" presence in the room.
It's the same with some gay guys, who go WAY out of their way to act all feminine and faggy to the extreme. Notice how some gays are hard to spot and others are just screaming queens? Same thing here with the dykes.
