You can stereotype both dogs and people just fine. Stereotypes exist for a reason, they aren't just randomly created. It is true though that a lot of times stereotypes are formed based on misperceptions. And like I mentioned above, most people perceive rottweilers to be very aggressive dogs. Whether your particular 3 dogs are aggressive or not does change the fact that people are afraid of rottweilers.
Obviously you're a responsible person and this was a mistake, and like you said, you can understand why your neighbors were upset.
