Not sure how to break this to you, but real, "real mayo" is an olive-oil based recipe: basically olive oil, egg yolks, mustard, wine vinegar, water, lemon juice and seasoning.
Okay, okay I'm being a smart-ass and you probably meant dips with the oil still showing as it were, variations of vinaigrette. They will be the choice of most restaurants because that kind of dressing is more of a seasoning to enhance the flavor of the artichoke, while mayonnaise tends to dominate it. Artichokes are after all fairly expensive and troublesome if you want an excuse to dip mayo. Try quick frying some cubes of white bread in oil and garlic instead
