There are already a ton of seminars on most of that stuff, and or web documentation so another seminar might be old hat.

If you were to do something it should probably be more along OOP and MVC, but generic php stuff would bore the hell out of me, and even though I know about OOP and MVC it might interest me to sit through refreshers. Scalability, portability and reliability might be an interesting topic as well. I have seen many adult companies not position themselves for catastrophic failure, or growth and it hurts them everytime. For a mission critical business a backup of your mysql database just isnt sufficient. You need raids, and you need clustered mysql boxes and webservers.

That info could save webmasters thousands if the seminar is geared towards both small and large adult companies.

I have been through most of this stuff, but it would be good for most people to sit through, even program owners just to get an understanding of what is involved with growth. Educating programmers is one thing, but the key lies with educating the program owners and site owners, because most are clueless when it comes to programming. They tell their programmer to do it, and don't think about the consequences of having an inexperienced programmer.
