Quite often they are rich dudes already who just like the sport - one of the best was Mills Lane who was a real judge in Nevada in his regular profession (Mills Lane was the ref at the Tyson/Holyfield ear-bite match, and for a while hosted one of those lame Judge Judy kind of shows...he was also the ref voice on MTV's Celebrity Death Match).

BTW, rumor has it that Super Mario has done porn on the side too.
