Mandrake has an incredibly easy installation process and will get you into a desktop GUI from the start. So you can point and click around and get used to it a little bit easier.
I've also used slackware which installs easily as well, but as far as I know, doesn't auto install the Xwindows stuff. It may have updated since last time I looked at it.
