I can't speak to how well the niches convert, but if you want to take advantage of what's most popular, the Overture (formerly GoTo) Suggestion Tool can be very useful.

Type in the first word, such as 'amateur' and you'll get an idea of how many searches there were during a 30 day period - usually for the previous month. It's also great for building metatags and site keyword inclusion (note: all results with this tool show only the singular version of search terms. So even though people are probably searching for 'nude amateurs', it will show up as 'nude amateur' :-)
