Are you running a mic right into your soundcard? Sounds like you have the input cranked way up.
If that's what you're doing, you should get yourself a preamp to run your inputs through.
I run a mic through a little ART StudioV3 preamp and it helps a ton. Here's a song I was messing with last week (I'm still writing parts for it). The acoustic guitar is a peice of shit my wife got on Ebay for 20 bucks but it doesn't sound too bad mic'd up well.
