Animals and humans do that sometimes. There are still electrical signals transmitting in the muscles. Like when you turn off the water on a hose there is still water coming out the end for a minute.
My grandfather killed a duck with hands by breaking its neck and then ripping the head off. I was a little kid and was horrified. But I really freaked out when the duck kept walking around with no head and came towards me.
