For multi-room monitoring, you could go with an audio/video distribution unit. Basically it's a box you put somewhere (usually the basement) and you run your camera feeds into it. Then out the other side you run your cables out to your TV's or monitors on a dedicated channel (like a modulator, channel 3 or 4 on your TV).

That's one neat way of doing it.

You could also go with an 8-channel DVR card that has LAN access built in. Then you could at least pull the cameras from any computer on your network or wireless laptop.

edit - The biggest issue you run into with multi-area monitoring is loss of the video signals. Even with video boosters the video may not be that great. Also, you can only have the multiplexor in one place at a time.
