In Kokomo, Indiana my wife and I live a decent life on around 2500/month, and that is with 2 babies. Give or take 500-800/month depending on how things are going for me and if she takes a some time off from work.
Our exoenses look like this
mortgage: 350/month (70k$ house, owe around 47k on it, put about 20k down when I bought it, back when money was flowing, 1400 square ft house, 2BR, living room, family room, dinning room, 1 BA, and kitchen, ya its a small house but its not like I am living in a hut
car payment: 100$. Right now I got 3 vehicles, all are old, but all of them run great. 2 of them are paid off, and the third one we are only paying 100$/month on.
gas: around 200/month
Car insurance: 110/month
Utilities: 100/month electric, gas (can get up to 200/month in the winter) average is around 100/month, cable and internet 90/month, phone 30/month, water 30/month
Total Utilities around 350/month
That right there is just over 1100/month, that gives us an easy 300/week for food, diapers, formula, and to do stuff on. Its not the easiest or most fun lifestyle, but its certainly not too awful bad
