when you're targeting a keyword, obviously it helps to have the keyword as your domain name - but how much does that value decrease when you add "-" between the keyword words? like: "Men Hair Styles" as "men-hair-styles.com" or "men-hairstyles.com"

The domain name PR is the same as the PR of your root default page and that's all. All the other pages and subfolder pages have to earn their own PR through link popularity (internal or external).
Page jackers can win/steal prominence over your 'keyword domain' which demonstrates that there are many other factors which are taken into consideration.
Separating words with delimiters like '-' does technically parse better, but 'dashed' domains are not as surfer friendly or 'classic'.
You can achieve your SERPS dominance through your pages and directories, which should have delimited keywords '-' or '_'.
