Okay, having some spanish ascendance, I would say that there is no such thing as a spanish omelete. What is typical is tortilla espaņola, which has nothing to do with mexican tortillas.

The tortilla espaņola it's made with potatoes boiled in oil, then drained, add some onions, beaten eggs and chorizo colorado - a sausage - cook until is firm yet a bit juicy.

You can eat it hot or just cold. It should have the size of a frying pan and about 5 inches high.

Remember that mexicans hate spanish so.........LOL
