If you have to plan ahead for 'worst case' scenarios - I suggest leaving full, detailed instructions somewhere safe that someone can get to if for some reason you are unable to do it - of course, the person helping you must be capable of following directions & be a little savvy with your particular work.

The other option is have 3 people - none of which will have enough information to take your entire operation & copy it alone. Each will have enough information to do their particular thing for you but not enough to tie it with the rest of the operation. If they decide to backstab you & get together to copy your business plan, they will eventually start working against eachother & will break up their partnership out of greed & power struggles & when there are 3 - two generally make alliances to kick out the third & there is always some vital information that person will have kept secret. *hopefully*
