Do you know how to read? What part of your definition makes any reference whatsoever to spelling? Not that you will care, or even be able to understand, but I will tell you why the two are different.

Every native speaker of a given language has a perfect grammar of that language in his/her brain. This knowledge is subconscious and innate. The ability to read and write, on the other hand, is something which must be consciously taught.

The complete grammar of any language includes information on how to articulate and pronounce words. The sound pattern of languages changes over time. The spelling system does not change with it. Originally, the spelling system of English was meant to approximate the way that English actually sounded. Because the language has changed so radically over the past 800 years, it no longer does.

Our knowledge of the grammar of English actually conflicts with our ability to spell words. Note that when we don't know how to spell a word, we try to sound it out. Consequently, SPELLING AND GRAMMAR HAVE NOTHING TO DO WITH EACH OTHER.
