Not all chefs are cut out to own a restaurant. A friend of mine went to CIA (Culinary Institute of America) and said he skated by in the business part of classes. He liked to cook, and it turns out he spent all that money to be an employee for life. Those who pass the business part with flying colors, usually skate by with sub-par cooking.
