Teach Yourself VISUALLY Digital Video and/or Teach Yourself VISUALLY Premier 6 (if you want to use Adobe Premier to edit)
I recommend the Teach Yourself VISUALLY series of books for newbies. They have versions for Photoshop, Illustrator, Flash, and lots more. They make things VERY easy to understand for newbies.
