well, if you are looking for ultimate image quality i would not use a video camera.
i would use a high-end pro digicam (maybe canon 1ds) with a big buffer and a very high shot per second continuous exposure rate while turning the turnstyle at a speed to give you the required illusion of motion (or not). many of these cameras can shoot several high quality shots per second in continuous mode.
years ago we created multiplex art holograms using the same technique---but in those days used a 35mm mitchell motion picture camera shooting about 15 frames/sec.
either way you can get visually stunning results.
