Get 5 pounds of wings.
Seperate the tips, the middle, and the lil drum stick portion.
Toss the tips into a bag and save for stock, or just throw away.
Get a pot of oil or a wok of oil (I like the wok) about 1/2 full. Canola oil or vegetable oil is good.
Let oil reach 350-360 degrees.
While oil is heating in a sauce pan put 2 sticks of unsalted butter and 1 twelve or 16 once bottle of hot sauce in it. (franks red hot works very well). Bring to a simmer.
Have a very large salad bowl ready.
Drop your wing parts into the hot oil. Roughly in 3 batches.
Let them fry until the skin is almost transparent.
With a spider (a cooking tool, looks like a wire basket on a handle) remove the cooked wings and place in salad bowl.
Add 1/3 of the cooked sauce and toss to coat.
Repeat until all three batches are done.
Serve with blue cheese dressing and celery if desired.
