I run an air gap network at the home office for my other projects, it insures mainly that any data that shouldn't be exposed to the rest of the world won't unless I make a conscious effort to do so.
Also, those machines never see any downtime from viruses or other security threats, mind you there is AV software just in case.
The only real security threat is with the computer being stolen, but they must first deal with the dog and the Remington 870 .
But I digress, its not hard working on a computer with no connection, cold turkey is a little hard at first, just make sure your stand alone box has everything you need to get your job done without reverting to your connected machine.
