you don't cut them completely out. For 2 weeks you can only have 20 grams a day...then after that you add 20 grams per day until you're still losing *some* weight...then when you reach your "goal" weight, you add another 20 grams a day until you stop losing weight without gaining weight.
You then know how many carb grams you can eat every day without gaining/losing weight and be "healthy".
