Do you really think the top guys in these fields just reach a plateau, then give up and go on vacation?

On the contrary. For most who are successful in creating a business from scratch, a plateau is actually the best prognosis. The number of former stars of this (or any other) industry, is far greater than the number who have had more than one turn under the spotlight.
There are two basic business models: long-term and short-term. The former doesn't appeal to nearly as many, because it requires ongoing effort and the results are unlikely to be spectacular.
And if you do manage to get rich quickly, timing is likely to be the main reason for your success. By definition, the moment passes for all such opportunities and although those who created the bandwagon or climbed on early enough may have generated enough impetus to last longer, a bandwagon remains a bandwagon.
In fact if those who enjoy short-term success recognized their limitations and converted, while they still could, to a long-term model, they would have a better chance of survival. The biggest mistake most make, is to believe their own myths and think they can be successful again. The vast majority will fail and many will blow all the profits they made the first time around, learning that lesson.
