Pick it up in a bakery. Insist on it made the same day, preferably still warm. Never buy pre-sliced as it starts to dry the moment it is sliced.
Next thing is quality meat. I use a real deli or butcher to slice it to order and avoid pre cut meat, and stay very clear of packaged meat.
Use a quality cheese (again deli) and nothing that is pre packaged and sliced.
Fresh in season veggies.
Then if you insist on quizno's or subway type sandwiches. Get yourself a high grade virgin olive oil, and a vinegar you like. Add mostly fresh herbs to it with the exception of oregano which is better dried.
That should do you.
