I have been working with stories for the last six years and personally I may use incest stories on a site if all people involved are over 18.
What I will not use are any stories about minors, animal sex, rape, etc. I will not use them because I know for a fact that here in Canada stories about these things are illegal and I don't exactly want to go to jail. Plus using these types of stories creates a lot of hastle with other things. I see that you are in Canada too so I strongly suggest that you do not use stories like the ones I named, but it doesn't look like you were planning to.
I have unintentionally purchased story sets with content I don't like but have either not used these stories or have changed them if this is ok with the licence agreement.
Using incest stories may get you in trouble with certain things such as PPC (I was denied for a PPC listing because of prostitution stories), sponsors etc and the really illegal stuff like child rape stories could get you in trouble with Visa.
