Belgium's a few hours by train. Well worth visiting if you haven't been before. You can give Brussels a miss but Brugges and Antwerp are worth seeing.
As for the hostel, I can guarantee you a bed in what will probably be a four bed dorm. It's a hostel with a mix of small dorms and about half a dozen double rooms. They don't do a lot of bookings and they definitely don't book New Years Eve. Let me know what nights you definitely want to spend in Amsterdam and I'll send off an email to one of the people there and see if they have a double room. But I guarantee you a bed in a dorm at the very least. No problem.
