Either way, I don't think saying "Let's watch a DVD" makes as much sense. Back in the VHS days nobody said "Lets watch a VHS", so whats the deal?

because the term "video" became synonymous with watching a VHS tape. Upon the emergence of a new medium, i.e. DVD, a new term was required to avoid confusion. We realize you're on the cutting edge but lots of people actually do own DVD players and VHS machines concurrently. Finding oneself in such a household and casually suggesting "Let's watch a video" only begs the inevitable question, "Which format do you prefer, VHS or DVD?"
Thus, by attaching a new term to the new medium, we eliminate unnecessary circle jerking and are able to cut ot the chase.
