I like Gentoo, but first and formost, USE WHAT WORKS.
FreeBSD is proven solid on webservers, it's most people's choice.
Linux is proven to perform better on mailservers and database servers, generally.
They're both available, use the best tool for the job.

First off, I have 15 machines of different architectures and oses for a reason. I do security auditing, and penetration tests. I am also a sysadmin. I use what works, I also use what provides the highest quality of service and greatest reliability. Do you want to be hosted on an insecure machine that preforms faster under a high load and gets hacked, or do you want to be on a machine with less users, that preforms just as well as the linux machine under the same load without as many users that wont get hacked or segfault on you? Don't be cheap, go for the proper solution.
