Betacams' were the ones they preferred. Big, Heavy, and extremely expensive. Hence why in the early days of TVX there were only a few people, shooting most of the shows.
If you didn't own / have access to a betacam, you couldn't provide them with the quality they required. If you wanted to rent a betacam, the cost of rental was more than you would be earning from TVX for the finished product...
Hence single camera shoots.
Sure, that changed later on, when a 3CCD camera was good enough quality, but that was more because they then had the tech at TVX end, which could 'Bump Up' the quality sufficiently for broadcast.
Of course, these days, its all moot - My phone in my pocket can record 4K at 60FPS, but in the early days of TVX, (Which is the era I am referring too) just having access to the right camera, was cost prohibitive... Let alone a second to shoot alongside.
