Sambol oelek. Chinese restaurants use it locally for General Gau’s Chicken (General Tso’s in some areas of the USA), various spicy dishes. I asked my favorite chef what he used years ago. Whenever I’d order food extra spicy, they’d come out from the back to see if I was Asian! At one restaurant in Providence they asked if I had Chinese relatives!
