As for paperwork, I always suggest getting with a lawyer to cover your needs. Even if you take the one's that you've gotten when you purchase content, and craft it to your site, you should still spend a few dollars and have one look it over to make sure there are no gaps for your specific needs
It's really amazing what you can get for a setup these days. If I was to shoot I'd think a very modest invesment of $1000 could get you going for amateur niche shoots like what your looking to do.
