Focus your time and energy in your category and tag pages, they get updated on a daily basis, which google loves pages that get constant updates. Then watch your webmaster tools to see which pages are actually getting listed in Google, not just spidered. When you find a page that is receiving a click here or there but is not on the first page of the search results, go in and start to write long descriptions on those pages to help with SEO.
After making a major change to the page, within webmaster tools use "URL Inspection" and select "Request Indexing". That way you don't have to wait until the google bot picks up the changes. I've been told not to over use this feature, so I normally only submit a page or two per week per domain, but it can speed up the time to getting the changes looked up by months if your site is not being spidered regularly.
Good luck
