It's appalling how much time and energy is wasted arguing about petty things like this.
To answer the OP's question, I haven't noticed that but wouldn't be surprised if I came across it.
My opinion : whosoever is triggered by seeing the word 'he' being used to refer to a general individual should know that replacing it with 'she' is very hypocritical because they are doing to same thing, just with the opposite word.
