It's really not that difficult being Vegan. The best part is no fast food at all, which hasn't been too difficult. For breakfast I have oatmeal and fruit, for lunch I have soup, and dinner most nights is a shake. Anything in-between is usually fruit. No soda. No fucking Doritos too, which I miss.
I still have the occasional pizza, but when I do it's vegetarian. In fact, I've been playing around with a potato based crust which has been interesting.

I wouldn't say that you are losing weight from cutting out meat so much as cutting out processed sugars and possibly processed grains.
I went on the Whole30 diet and went from 255 to 225 in about 6 weeks.
Very similar to how you are eating, only with meat, but in the correct portions, no alcohol and nothing that is processed. You have to make everything from scratch. And no grains (rice, wheat, cereal, bulgur, quinoa, etc)... Though I did eat quinoa with lots of other things in it like beans (also not supposed to eat), corn, celery, carrots, etc.
But, meat is not sustainable as a commodity... so cutting it out ain't a bad thing. But I do loves my steak...
